Job Requirements
- Must be 18 years of age or older upon employment
- must complete all required Seneca Gaming Corporation training programs within nine months from commencement of employment
- ability to stand, walk, and move through all areas of the casino
- maintain physical stamina and mental attitude to work under pressure
- moderate physical activity including handling objects up to fifty pounds
- work in a moderately loud to loud noise environment with exposure to smoking
- comply with all company policies and regulations
- meet attendance guidelines
- possess excellent interpersonal skills
Job Qualifications
- Degree from a postsecondary culinary arts training program
- minimum four years experience as sous chef
- minimum two years experience in a high volume, 24-hour restaurant food preparation position
- excellent interpersonal, customer service, communication, coaching, team building, and problem solving skills
- extensive knowledge of fine seafood, protein, and poultry
- computer literate in Microsoft Office applications including Excel, Word, and email
- knowledge of automated restaurant systems
- excellent communication skills including reading, writing, and speaking effectively
- ability to resolve problems and conflicts tactfully
Job Duties
- Manage and oversee kitchen operations for a specific dining room
- ensure food is nutritious, safe, visually appealing, and properly flavored
- maintain a sanitary and safe work environment for all employees
- plan and price menus according to quality standards
- prepare budgets and maintain payroll and food cost records
- train kitchen personnel in cooking methods, presentation techniques, portion control, and nutrient retention

- control food costs through purchasing specifications, storeroom requisition, and waste control
- evaluate, reward, and discipline kitchen personnel
- relay guest complaints and compliments to management
- ensure compliance with Seneca Gaming Corporation policies and internal control standards
- provide exceptional customer service and maintain professional interactions with guests, co-workers, and management
- maintain clean work areas, utensils, and equipment
- attend meetings and complete necessary training within prescribed timelines
