The role of a Hibachi Chef at Benihana is multifaceted and integral to delivering the extraordinary dining experience that guests expect. This position involves engaging, entertaining, and interacting with guests directly at the teppan grill while cooking hot meals. The Hibachi Chef must maintain high standards of food preparation and presentation, ensuring correct food portions and adherence to recipe specifications. Additionally, the chef is responsible for keeping the kitchen and hibachi cooking areas clean, sanitary, and organized, strictly following food safety guidelines and company policies. The job demands a strong ability to multitask, combining culinary skill with showmanship, as the chef performs cooking demonstrations that captivate guests while preparing a variety of meats, seafood, poultry, and vegetables using a range of kitchen equipment. Training is provided through a paid 5-week program designed to help new chefs excel not only in cooking but also in guest interaction and entertainment. Job Requirements

  • High school diploma or GED
  • successful completion of Benihana chef training program
  • previous experience as a chef or cook preferred
  • excellent communication and interpersonal skills
  • ability to work in a fast-paced environment

  • ability to follow recipe specifications and portion control
  • strong customer service orientation

Job Qualifications

Job Duties

  • Greet and welcome guests within 15 minutes of their teppan order
  • perform a cooking show for assigned tables ensuring interaction with guests is appropriate and courteous
  • provide guests with information about Benihana foods as they are being cooked or upon guest inquiries
  • respond promptly and courteously to guest requests
  • ask guests for cooking preferences and follow guest instructions
  • prepare a variety of meats, seafood, poultry, vegetables, and other food items using kitchen equipment
  • perform shift opening and closing duties such as cleaning refrigeration units, gaskets, chef carts, and floors
  • maintain kitchen, cooking areas, kitchen equipment, and food storage areas clean, sanitary, and organized
  • report any kitchen equipment or maintenance issues to the chief chef or manager on duty
  • comply with company standards on food portioning, cooking methods, quality standards, recipes, storyboards, service cycle, policies and procedures
  • prepare foods according to company portion standards and recipe specifications including battering, breading, seasoning, and marinating
  • adhere to food presentation and garnishes guidelines
  • handle, store, label, and rotate foods properly following health safety laws and FIFO method
  • use knives, hand tools, utensils, and equipment to portion, cut, slice, julienne, whip, beat, maintain holding temperature, chill, or freeze foods
  • adhere to company guidelines on alcoholic beverage service
  • present a clean and neat appearance and act courteously with all guests
  • notify manager on duty if guests are not satisfied or if an accident occurs
  • participate in special occasion celebrations and may photograph or be photographed with guests
  • perform other duties as assigned by a supervisor
