The role of Hibachi Chef at Benihana is dynamic and vital to delivering the hallmark experience the brand is known for. This position is primarily responsible for engaging, entertaining, and interacting with guests while preparing and cooking meals on front-of-house hibachi tables. The Hibachi Chef not only ensures that food is prepared according to company standards but also provides a captivating cooking show that enhances the overall dining atmosphere. This requires a blend of culinary expertise, showmanship, and excellent customer service skills. Candidates in this role must proficiently cook a variety of meats, seafood, poultry, and vegetables using multiple kitchen tools and equipment, including grills, ovens, fryers, and food processors. Attention to detail is critical, as chefs must ensure correct food portioning, proper handling, and compliance with health and safety regulations including food storage and cleanliness.

Additionally, the Hibachi Chef is responsible for maintaining a clean and sanitary cooking and kitchen environment, performing shift opening and closing duties, and contributing to the smooth operation of the restaurant. The role involves direct interaction with customers, answering questions about the menu, accommodating guest preferences, and promptly addressing any guest concerns to guarantee an exceptional dining experience. Candidates will participate actively in making special occasion celebrations memorable and may also be involved in photographing or being photographed with guests as part of the customer engagement. Job Requirements

  • High school diploma or GED
  • Ability to successfully complete Benihana chef training program
  • Previous experience as chef or cook preferred
  • Ability to engage and entertain guests effectively
  • Knowledge of food safety and sanitation standards
  • Ability to work in a fast-paced, dynamic environment
  • Strong customer service and communication skills

Job Qualifications

  • High school diploma or GED
  • Successful completion of Benihana chef training program
  • Previous experience as chef or cook highly desirable

Job Duties

  • Greet and welcome guests within 15 minutes of their teppan order
  • Perform a cooking show for assigned tables ensuring interaction with guests is appropriate and courteous
  • Provide guests with information about Benihana foods as they are being cooked or upon inquiry
  • Respond promptly and courteously to guest requests
  • Ask guests for cooking preference and follow guest instructions
  • Prepare a variety of meats, seafood, poultry, vegetables, and other food items using kitchen equipment
  • Perform shift opening and closing duties such as cleaning refrigeration units, gaskets, chef carts, and floors
  • Maintain kitchen, teppan cooking areas, and kitchen equipment clean, sanitary, and organized
  • Report kitchen equipment or maintenance issues to chief chef or manager
  • Comply with Company standards on food portioning, cooking methods, quality standards, recipes, service cycle, policies, and procedures
  • Prepare foods according to portion standards and recipe specifications including battering, breading, seasoning, or marinating
  • Adhere to Company guidelines on food presentation and garnishes
  • Handle, store, label, and rotate foods in accordance with food safety and health laws
  • Use knives and utensils to portion, cut, slice, julienne, whip, beat, maintain holding temperature, chill, freeze or otherwise produce food
  • Adhere to Company guidelines on alcoholic beverage service
  • Maintain a clean and neat appearance and use a courteous manner with all guests
  • Notify MOD immediately when guests are not satisfied or if an accident occurs
  • Participate in restaurant staff efforts to make special occasions memorable
  • Perform other duties as assigned by supervisor
