The role of a Teppan Chef at Benihana is a unique and exciting opportunity to combine culinary skills with interactive guest entertainment. This position requires not only culinary expertise in preparing a wide variety of fresh ingredients such as meats, seafood, and vegetables but also the ability to engage and entertain guests throughout the dining experience. Teppan Chefs work primarily at hibachi tables, performing cooking shows that include interactive elements designed to create memorable experiences for guests. Responsibilities include welcoming guests, preparing meals according to company recipes and portion standards, maintaining cleanliness and sanitation in cooking areas, and managing kitchen equipment effectively. The role demands adherence to food safety standards and company policies, ensuring the highest quality of food presentation and guest satisfaction. - physical ability to perform shift opening and closing duties
Job Qualifications
- High school diploma or GED
- ability to successfully pass Benihana chef training program
- previous experience as chef or cook highly desirable
Job Duties
- Greet and welcome guests within 15 minutes of their teppan order
- perform a cooking show for assigned tables ensuring interaction with guests is appropriate and courteous
- provide guests with information about foods as they are being cooked or upon guest inquiries
- respond promptly and courteously to guest requests
- ask guests for cooking preference and follow guest instructions
- prepare a variety of meats, seafood, poultry, vegetables and other food items for cooking using kitchen equipment
- perform shift opening and closing duties such as cleaning refrigeration units, gaskets, chef carts and floors
- maintain kitchen, teppan cooking areas, kitchen equipment and food storage areas clean, sanitary and organized
- report kitchen equipment or maintenance issues to chief chef or manager on duty
- comply with company standards on food portioning, cooking methods, quality standards, recipes, storyboards, service cycle, policies and procedures
- prepare foods in accordance with portion standards and recipe specifications including battering, breading, seasoning and marinating
- adhere to guidelines on proper food presentation and garnishes
- handle, store, label and rotate foods properly according to public health safety and laws
- use knives, hand tools, utensils and equipment to portion, cut, slice, julienne, whip, beat, maintain holding temperature, chill, freeze or otherwise produce food for dining room
- adhere to company guidelines on alcoholic beverage service
- present a clean and neat appearance and use a courteous manner with guests
- notify manager on duty when guests are not satisfied or accidents occur
- participate in guest special occasion celebrations ensuring memorable experiences
- perform other duties as assigned by supervisor
