Job Description

Perseid Restaurant, situated within the renowned Hotel Saint Augustine, is a distinguished neighborhood bistro offering a refined and contemporary Gulf Coast-inspired take on the classic bistro dining experience. Known for its thoughtful approach to crafting dishes suitable for breakfast, lunch, and dinner, Perseid caters to a wide variety of guests—from those seeking a casual meal to others celebrating a special occasion. This Michelin-recommended restaurant, named one of Bon Appetit's 20 Best New Restaurants of 2025, prides itself on delivering an elevated yet approachable dining atmosphere deeply rooted in quality, creativity, and unforgettable guest experiences. Under the expert culinary leadership of Chef Aaron Bludorn and operational excellence of Director Cherif Mbodji, Perseid collaborates closely with the Bunkhouse and Hyatt teams to ensure an environment where innovation meets tradition in the heart of Montrose. Perseid’s commitment to both excellence and approachability establishes it as a landmark venue that combines the best elements of hospitality, cuisine, and community engagement.

The Sous Chef role at Perseid is a pivotal position responsible for supporting the Executive Chef in overseeing seamless kitchen operations, leading the culinary team, and maintaining high standards of quality and professionalism. This position demands someone who leads with both passion and precision, guiding kitchen staff through training, mentorship, and continuous development to ensure every dish exceeds expectations. The Sous Chef also plays a critical role in operational planning, resource management, and cross-department collaboration to achieve both culinary and financial goals. Candidates should anticipate a dynamic, fast-paced environment where flexible involvement—from menu development to special event coordination—is essential. Working in hospitality, particularly within a Michelin-recommended, hotel-embedded restaurant like Perseid, offers unique challenges and rewards for culinary professionals seeking to elevate their career and refine their leadership skills within an inspiring setting. This full-time position offers an exciting opportunity to grow alongside a celebrated team and contribute meaningfully to a vibrant dining destination in Montrose, where creativity and guest satisfaction are paramount.
