Job Requirements
- High school diploma or equivalent
- At least two years of relevant culinary or kitchen management experience
- Proven experience with inventory controls in food service
- Ability to manage a staff of 15 or more
- Strong communication and interpersonal skills
- Excellent organizational and multitasking abilities
- Ability to uphold company policies and values consistently
Job Qualifications
- High School diploma or general education degree (GED)
- Certification from a credited Culinary Institute preferred
- Minimum of two years of relevant culinary experience
- Experience with inventory controls involving food, beverage, kitchen supplies, and waste management
- Experience scheduling a kitchen staff of 15 or more
- Excellent verbal, written, and graphic communication skills
- Strong organizational skills
Job Duties
- Collaborate with other personnel to plan and develop recipes and menus considering seasonal availability and customer estimates
- Plan, direct, and supervise the food preparation, purchasing, and cooking activities within multiple kitchens or restaurants
- Inspect supplies, equipment, and work areas for conformance to standards and arrange for equipment purchases or repairs
- Check the quality of raw and cooked food products to ensure standards are met
- Monitor sanitation practices to ensure compliance with regulations
- Record production and operational data on specified forms
- Estimate amounts and costs of required supplies
- Order or requisition food and other necessary supplies
- Check quantity and quality of received products
- Conduct accurate inventory according to standards and procedures
- Prepare and cook foods for regular service and special events
- Perform personnel actions including hiring and firing staff with managerial consultation
- Supervise and coordinate activities of cooks and kitchen workers
- Instruct staff in food preparation, cooking, garnishing, and presentation
- Determine production schedules and staff requirements to ensure timely service delivery
