The Senior Taquero role at Tacombi is an exciting opportunity for those passionate about Mexican cuisine and kitchen leadership. Reporting directly to the Master Taquero, or Kitchen Manager, the Senior Taquero plays a crucial role in the daily operations of the kitchen. This position focuses on menu execution, ensuring that all dishes meet the high standards set by Tacombi’s Culinary Director. The Senior Taquero oversees the production of food, monitors quality, and ensures recipes are followed precisely by the prep cooks. Beyond food preparation, this role includes training and developing kitchen team members, promoting adherence to company policies, and assisting with performance management to build a strong and talented kitchen staff.

Operational excellence is key for the Senior Taquero, who assists in managing day-to-day kitchen processes, from preparing prep lists to supporting cooks during busy service periods. Close coordination with the receiver on ordering and cost of goods sold management is an integral responsibility, as is maintaining cleanliness, food safety standards, and proper organization of the kitchen at the end of each day. The role also involves identifying and resolving potential operational issues, effectively communicating with the management team, and helping to meet weekly financial targets for labor and food costs.

Job Duties

  • Execute the menu items as designed by Culinary Director
  • Monitor the production of food to maintain quality and quantity under the Master Taquero’s direction
  • Ensure the execution of Prep Cooks follow Tacombi recipes
  • Be knowledgeable of restaurant policies regarding personnel and monitor all violations
  • Assist Master Taquero in managing the performance and training of kitchen team members
  • Ensure all Kitchen team members meet Department of Health standards and conduct daily DOH walkthrough
  • Assist in managing day-to-day kitchen operations including setting kitchen systems and processes
  • Support cooks and Kitchen Expo during busy times
  • Work with receiver on daily order guide to ensure proper quantity of products are ordered
  • Ensure kitchen is shut down properly at the end of the day
  • Identify potential food, menu, or equipment issues and communicate with management in a timely manner
  • Assist Master Taquero to ensure COGS and labor targets are met
  • Help build weekly BOH schedules to meet labor targets and ensure staff compliance
  • Optimize inventory usage and minimize waste
  • Manage daily labor including staff adjustments and compliance with breaks
