The role of the Zuma Sushi Sous Chef is pivotal within this dynamic environment. As a key member of the culinary team, the Sushi Sous Chef supports all facets of sushi preparation, menu development, and staff supervision, ensuring that each dish maintains the highest standards of quality, creativity, and efficiency. In this role, the Sushi Sous Chef collaborates closely with the Head Sushi Chef to plan and execute sushi menu offerings, including recipe development and quality control measures. They take an active role in supervising and training sushi kitchen staff, cultivating a culture of consistency and excellence. During service periods, the Sushi Sous Chef oversees sushi production to guarantee timely and flawless execution of orders, while managing inventory levels and overseeing the procurement of fresh fish and essential sushi bar supplies. This role also involves close monitoring of ingredient freshness and adherence to sanitation standards, contributing to an outstanding dining experience for guests.
Additionally, the Sushi Sous Chef participates in the creative process behind seasonal menu updates, special promotions, and sushi-themed events, bringing innovation and inspiration to the culinary offerings. Job Requirements
- Minimum 2 years sushi sous chef experience in a high-volume sushi restaurant or hospitality establishment
- Valid health and safety certification as required by local regulations
- Ability to work flexible hours including evenings weekends and holidays
- Strong knowledge of sushi preparation techniques and seafood handling
- Experience supervising and training kitchen staff
- Excellent organizational and inventory management skills
- Passion for Japanese cuisine and culinary excellence

Job Duties
- Assist the head sushi chef in planning and executing the sushi menu offerings including recipe development presentation and quality control
- Supervise and train sushi kitchen staff to ensure consistency and excellence in sushi preparation and presentation
- Oversee sushi production during service periods ensuring timely and accurate execution of orders and adherence to quality standards
- Maintain inventory levels of sushi ingredients seafood and sushi bar supplies and oversee ordering and receiving of fresh fish and other sushi-related products
- Monitor the freshness and quality of sushi ingredients including fish seafood rice and vegetables and ensure compliance with food safety and sanitation regulations
- Assist in the creation and execution of seasonal sushi menus special promotions and sushi-themed events and participate in menu tastings and evaluations
- Assist in budgeting and cost control measures including monitoring food costs portion control and inventory management
