The Sushi Prep Cook position at Hana Group North America represents an exciting entry point for individuals passionate about Japanese cuisine and eager to develop their culinary skills within a supportive and dynamic environment. This role is designed as a developmental opportunity, allowing aspiring sushi chefs to master essential techniques such as knife skills, sushi rolling fundamentals, and food safety practices. As a Sushi Prep Cook, you will be responsible for preparing traditional Japanese sushi rice, as well as cutting, slicing, and filleting various types of fish, ensuring every ingredient meets the highest quality standards. Maintaining a clean and sanitary work station to prevent contamination is a critical aspect of this position, as is adhering to portion control and presentation guidelines to uphold the restaurant's reputation for excellence.

Job Duties

  • Cutting, slicing and filleting different types of fish and vegetables
  • Inspecting the quality of fruits, vegetables, and fish used to prepare sushi dishes and informing the STL when quality is sub-standard
  • Preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety
  • Maintaining a clean work environment in order to prevent food contamination
  • Reporting any problems with kitchen equipment to the manager on duty
  • Sterilizing all utensils, instruments, and equipment used in sushi preparation before every use
  • Greeting and communicating with customers to ensure that they feel valued as our customer
