The Sushi Prep Cook position at Hana Group North America serves as the crucial entry point into their culinary team. This role is designed as a developmental opportunity, allowing individuals new to the sushi craft to learn and master the essential knife skills, sushi rolling fundamentals, and stringent food safety practices necessary for sushi preparation. As a Sushi Prep Cook, you will gain hands-on experience in preparing traditional Japanese sushi rice, skillfully chopping, slicing, and filleting various types of fish, as well as vegetables required for sushi dishes. You will be responsible for maintaining a clean and hygienic workspace to uphold food safety standards and prevent contamination. This role requires a keen eye for quality, as you will be inspecting ingredients to ensure only the freshest fish and produce are used to create dishes that meet Hana Group's high culinary standards.

This position offers valuable exposure to the operations of a busy sushi kitchen, where the ability to perform well under pressure is critical. You will be trained to maintain consistency in presentation, portion size, and flavor to deliver a superior dining experience. Strong communication skills are essential, as interacting with customers and team members plays a key part in creating a welcoming atmosphere and ensuring customer satisfaction. This role requires a minimum of six months experience in the food service industry, with preference given to those who have prior sushi rolling experience. The Sushi Prep Cook must also be physically capable of standing for extended periods and working under pressure while exercising good judgment. Job Duties

  • Cutting, slicing and filleting different types of fish and vegetables
  • inspecting the quality of fruits, vegetables, and fish used to prepare sushi dishes and informing the STL when quality is sub-standard
  • preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety
  • maintaining a clean work environment in order to prevent food contamination
  • reporting any problems with kitchen equipment to the manager on duty
  • sterilizing all utensils, instruments, and equipment used in sushi preparation before every use
  • greeting and communicating with customers to ensure that they feel valued as our customer
