The Sushi Chef I position is an entry-level role designed as a developmental opportunity within Hana Group's culinary team. This position is ideal for individuals eager to start their career in sushi preparation, providing an excellent foundation in essential skills such as knife techniques, sushi rolling, and food safety protocols. As a Sushi Chef I, you will be responsible for preparing traditional Japanese sushi rice, expertly cutting and filleting various types of fish and vegetables, and maintaining cleanliness and safety in the work environment. Your role will also involve inspecting the quality of ingredients to ensure only the freshest produce and seafood are used, which is critical to the authenticity and quality of the dishes served.

This role demands a high level of attention to detail to uphold the restaurant’s quality standards, especially during busy service periods. Working effectively under pressure, you will contribute to creating an inviting atmosphere for customers and delivering consistent culinary excellence. The Sushi Chef I will also engage with customers to ensure their satisfaction and enhance their dining experience. Job Duties

  • Cutting, slicing and filleting different types of fish and vegetables
  • Inspecting the quality of fruits, vegetables, and fish used to prepare sushi dishes and informing the STL when quality is sub-standard
  • Preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety
  • Maintaining a clean work environment in order to prevent food contamination
  • Reporting any problems with kitchen equipment to the manager on duty
  • Sterilizing all utensils, instruments, and equipment used in sushi preparation before every use
  • Greeting and communicating with customers to ensure that they feel valued as our customer
