Job Description
The Multnomah Athletic Club is a prestigious private social and athletic club located in Portland, Oregon. The Multnomah Athletic Club is currently seeking a motivated and skilled Sushi Line Cook to join its food and beverage team. This is a full-time onsite position responsible for the daily preparation of high-quality sushi and other food items in a timely, efficient, sanitary, and consistent manner. As a Sushi Line Cook, the successful candidate will work at a designated station in the kitchen as scheduled by the Executive Chef and execute all related duties associated with that station. This role demands a thorough understanding of food preparation, kitchen safety, and sanitation protocols, as well as the ability to work well under pressure in a fast-paced environment. The Sushi Line Cook will be key in ensuring that all dishes meet the club’s established recipes, portion control, and presentation standards, contributing to an outstanding dining experience for all members and guests.
This position requires someone who is highly organized and can maintain cleanliness and order at their workstation in compliance with health department regulations. The Sushi Line Cook will also be expected to properly store and rotate stock items, fabricate kitchen items as per recipes, and restock ingredients during their shift as needed. Additionally, they will prepare dishes that accommodate members with food allergies and intolerances with care and precision. Strong communication and teamwork skills are essential, as the individual must collaborate with fellow kitchen staff and adhere to the club's code of conduct. The role also involves promoting safety by identifying and reporting hazardous conditions and ensuring compliance with the club’s safety policies. Job Requirements
- One year of line cook experience in a similar environment
- Possession of valid food-handler’s permit
- Understanding of professional cooking and knife handling skills
- Understanding and knowledge of safety, sanitation and food handling procedures

Job Duties
- Prepares and fabricates items for use in the kitchen according to established recipes and procedures
- Stores product as received and rotates stock according to established procedures
- Maintains coolers and storage areas and ensures cleanliness, sanitation and organization of all areas
- Keeps workstation clean, sanitary and orderly in accordance with health department regulations
- Prepares all food items as directed in a sanitary and timely manner
- Follows recipes, portion controls and presentation specifications as established by the Executive Chef
- Restocks all items as needed throughout shift
- Prepares dishes for members and guests with food allergies and intolerances
- Works at an efficient and consistent pace
- Complies with all Club safety policies and procedures demonstrating safe work practices
- Identifies and reports unsafe or hazardous work conditions
- Reports all workplace injuries and illnesses to supervisor
- Promotes the MAC code of conduct in club activities and demonstrates the importance of providing quality service to members
- Other duties as assigned
