The Sushi Chef role at SSP America, based at the Detroit Metropolitan Wayne County Airport, is a critical position responsible for the preparation and supervision of sushi and other Japanese/Asian cuisine offerings. As a Sushi Chef, you will take ownership of sushi preparation processes ensuring the highest standards of quality and presentation. Job Requirements
- Minimum three - five years of experience in food/beverage operations
- Proven experience preparing sushi, sashimi and specialty rolls in a high volume environment
- Food handlers permits as required by law
- Must be minimum 18 years old
- Demonstrated experience managing or supervising kitchen staff
- Experience maintaining food safety and sanitation standards, including proper handling of raw fish and seafood
- Experience working in full service or quick service environment

Job Duties
- Understands the guest is our number one priority
- Ensures each guest receives outstanding service by providing a guest-friendly environment, maintaining high standards, demonstrating strong product knowledge, and supporting all aspects of guest service
- Prepare sushi, sashimi, and rolls according to recipes and presentation standards
- Handle and store raw fish and ingredients safely following food safety guidelines
- Maintain cleanliness and organization of the sushi station at all times
- Ensure proper rice preparation, seasoning, and consistency
- Monitor inventory levels and assist with ordering and receiving ingredients
- Inspect product quality and freshness daily
- Follow portion control and minimize food waste
- Set up and break down the sushi station before and after service
- Collaborate with kitchen team to ensure timely and accurate orders
- Adhere to all health, safety, and sanitation regulations
