This position of Hand Roll Bar (HRB) Chef is a critical role within the OMA KAI Sushi team. As the heart of the kitchen, HRB Chefs are responsible for preparing and presenting top-quality hand rolls, sashimi, and other menu items by carefully following specific recipes and preparation protocols. The role demands not only a mastery of sushi-making techniques but also a deep commitment to consistency and quality control. HRB Chefs are ambassadors of the brand, maintaining professionalism and positive interactions with customers. They lead by example, uphold high standards in food safety, presentation, and taste, and contribute to training and mentoring kitchen staff. The job requires attention to detail in managing kitchen inventory, minimizing waste, and adhering to food safety and hygiene standards as mandated by federal, state, and local regulations.
Working predominantly in an indoor dining environment, HRB Chefs experience a bustling atmosphere where noise levels depend on the restaurant's business volume. Job Requirements
- High school diploma or equivalent preferred
- Minimum two years kitchen experience
- Ability to stand for long periods
- Ability to handle knives safely
- Ability to lift up to 65 lbs
- Ability to bend, kneel, and maneuver in a kitchen environment
- Good communication skills
- Ability to work under pressure
- Disclosure of any food allergies upon application

Job Duties
- Prepare, assemble, present, and explain hand rolls to seating customers
- Ensure quality of food including accurate preparation and high standards
- Know the menu thoroughly and properly
- Minimize waste of food and kitchen items
- Make and prepare handrolls, sashimi, and other food items
- Prepare sushi rice according to specified processes and recipes
- Oversee inventory accuracy and supplier orders
- Contribute to training of kitchen personnel
- Perform side jobs including cleaning work stations and proper food storage
- Abide by all federal, state, and local labor health and safety laws
