We are currently seeking a talented Sushi Culinary Expert to join our team. This role is vital in carrying forward our tradition of excellence by crafting high-quality sushi and sashimi that delights and captivates our guests. In this role, you will be responsible for preparing and executing all sushi, sashimi, and maki rolls with precision and artistry. You will demonstrate expertise in selecting, handling, and cutting fish and seafood, adhering to strict food safety and sanitation standards, including HACCP guidelines. The position involves managing daily mise en place, maintaining an organized sushi station, and ensuring inventory levels support the freshness and quality expected by our guests. Collaboration with both back-of-house and front-of-house teams is essential to deliver a seamless dining experience.

Job Requirements

  • Must have prior experience as a sushi chef or cook
  • Ability to multi-task and excel in a fast-paced environment
  • Must be able to stand for extended periods and lift up to 50 lbs
  • Availability for nights, weekends, and holidays is essential
  • Must adhere to food safety and sanitation standards
  • Willingness to maintain cleanliness and organization at the sushi station
  • Must pass employment eligibility verification

Job Duties

  • Prepare and execute all sushi, sashimi, and maki rolls to meet Benihana's high standards
  • Demonstrate expertise in fish quality, proper cutting techniques, and sushi preparation
  • Ensure consistency in knife cuts, portioning, and plating for all sushi dishes
  • Adhere to food safety, sanitation, and HACCP guidelines for handling raw fish and seafood
  • Manage daily mise en place, including ingredient preparation, rice cooking, and sauce production
  • Maintain a clean and organized sushi station for efficiency during high-volume service
  • Monitor inventory levels of seafood, produce, and related items to ensure freshness
  • Collaborate effectively with BOH and FOH teams for a seamless dining experience
  • Engage with guests, offering sushi recommendations for an interactive experience
  • Carry out tasks assigned by chefs and kitchen leadership with enthusiasm and professionalism
