The Sushi Cook role at sbe’s Katsuya restaurant is integral to delivering these extraordinary dining experiences. The Sushi Cook is responsible for inspecting ingredient quality, carefully preparing various sushi dishes to meet established guidelines, and upholding food safety standards to ensure guest satisfaction and safety. Effective teamwork and coordination with kitchen staff and wait staff are vital for accommodating special requests and managing food allergies. Job Requirements

  • Minimum of two years relevant experience in high-end, service-focused environment
  • Must be at least 18 years of age
  • Must be able to stand or walk an eight-hour shift
  • Must be able to twist, tow, reach, bend, climb and carry objects as necessary
  • Must be able to lift and carry 25-50 pounds
  • Must be able to work inside and outside at all times of the year as needed
  • Must be able to provide documentation proving authorization to work in the United States
  • ANSI approved Food Handler Card
  • Responsible Beverage Service certificate recognized by the ABC

Job Qualifications

  • Prefer a minimum of two years experience in a contemporary dining restaurant
  • Must be at least 18 years of age or older
  • Excellent knife skills in fish filleting and sushi preparation
  • Strong understanding of food safety and sanitation standards
  • Ability to work efficiently in a team environment
  • Good communication skills
  • Basic knowledge of Japanese and California-style cuisine
  • Ability to multitask while maintaining attention to detail

Job Duties

  • Expertly cutting, slicing, and filleting different types of fish
  • Inspecting the quality of fruits, vegetables, and fish used to prepare sushi dishes and informing the Executive Chef when quality is sub-standard
  • Preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety
  • Maintaining a clean work environment in order to prevent food contamination
  • Regularly taking inventory of food supplies and other products
  • Reporting any problems with kitchen equipment to the manager on duty
  • Sterilizing all utensils, instruments, and equipment used in sushi preparation before every use
  • Communicating with wait staff to ensure that special requests and food allergy considerations are met
  • Must be a highly organized individual with the ability to handle numerous tasks at a time
  • Ability to work in a fast-paced, high-pressure environment
  • Has excellent verbal and written communication skills
  • Maintains a sense of urgency attitude for the completion of responsibilities/tasks
