Job Requirements
- Minimum of two years relevant experience in high-end, service-focused environment
- Must be at least 18 years of age
- Must be able to stand or walk an eight-hour shift
- Must be able to twist, tow, reach, bend, climb and carry objects as necessary
- Must be able to lift and carry 25-50 pounds
- Must be able to work inside and outside at all times of the year as needed
- Must be able to provide documentation proving authorization to work in the United States
- ANSI approved Food Handler Card
- Responsible Beverage Service certificate recognized by the ABC
Job Qualifications
- Prefer a minimum of two years experience in a contemporary dining restaurant
- Must be at least 18 years of age or older
- Excellent knife skills in fish filleting and sushi preparation
- Strong understanding of food safety and sanitation standards
- Ability to work efficiently in a team environment
- Good communication skills
- Basic knowledge of Japanese and California-style cuisine
- Ability to multitask while maintaining attention to detail
Job Duties
- Expertly cutting, slicing, and filleting different types of fish
- Inspecting the quality of fruits, vegetables, and fish used to prepare sushi dishes and informing the Executive Chef when quality is sub-standard
- Preparing various types of sushi dishes according to established guidelines on quality, portion size, presentation, and food safety
- Maintaining a clean work environment in order to prevent food contamination
- Regularly taking inventory of food supplies and other products
- Reporting any problems with kitchen equipment to the manager on duty
- Sterilizing all utensils, instruments, and equipment used in sushi preparation before every use
- Communicating with wait staff to ensure that special requests and food allergy considerations are met
- Must be a highly organized individual with the ability to handle numerous tasks at a time
- Ability to work in a fast-paced, high-pressure environment
- Has excellent verbal and written communication skills
- Maintains a sense of urgency attitude for the completion of responsibilities/tasks
