The role of Culinary Associate at The Ritz-Carlton, Cleveland is a non-management, full-time position, offered with a pay rate of $13.00 per hour and eligibility for tips. This position presents an exciting opportunity for culinary professionals who have sushi experience and a passion for food preparation and presentation. In partnership with Rouxbe Cooking School, the hotel provides associates with access to a comprehensive online training program designed to enhance culinary knowledge and skills through self-paced lessons. This innovative approach helps culinary staff at every level to grow and develop in their careers, applying learned techniques directly to their daily work in the kitchen.

As a Culinary Associate, your primary responsibilities will include preparing ingredients by portioning, chopping, and properly storing food items, thawing frozen products, weighing and mixing ingredients according to recipes or personal judgment, and cooking food to meet quality and presentation standards. You will monitor food quality continuously, ensuring that all dishes served meet the hotel's high standards by tasting, smelling, or using utensils for testing doneness. Attention to detail is crucial in ensuring proper portion control, appealing arrangement, and garnishing of dishes.

Besides food preparation, you will be expected to maintain cleanliness and sanitation in the kitchen by washing and disinfecting work areas, tools, knives, and equipment. Monitoring appliance and food temperatures to ensure safety and quality, reporting any issues to management, and communicating effectively during busy periods are also vital components of this role. Following all company policies, safety regulations, and hygiene requirements is mandatory to uphold the well-being of staff and guests alike.

Job Duties

  • Prepare ingredients for cooking including portioning chopping and storing food
  • Pull food from freezer storage to thaw in the refrigerator
  • Weigh measure and mix ingredients according to recipes or personal judgment
  • Prepare and cook food according to recipes quality standards presentation standards and food preparation checklist
  • Monitor food quality while preparing food
  • Test foods to determine if they have been cooked sufficiently using methods such as tasting smelling or piercing them with utensils
  • Ensure proper portion arrangement and food garnish to be served
