As a Sushi Cook, you will assist the Chef in daily operations related to the sushi menu, ensuring every dish delivered meets premium quality standards consistently. This role requires precision, creativity, and a deep understanding of sushi preparation—from rice making to fish cutting to the final presentation. You will be instrumental in maintaining freshness, quality, and the highest food safety and sanitation standards to protect guests and team members alike.

Starting at $20 per hour, this position blends culinary expertise with team collaboration, operational responsibility, and a passion for food safety and quality. The Sushi Cook will handle diverse tasks, including trimming meats and fish, monitoring inventory, adhering to portion control, managing workstation cleanliness, and continuously improving skills and techniques. Job Requirements

  • Minimum of 3 years of experience as a sushi cook or similar role
  • Excellent knife skills
  • Proficiency in sushi preparation techniques including meat trimming, rolling, cutting, and garnishing
  • Knowledge of food safety regulations and best practices in a culinary setting
  • Ability to work well in a fast-paced setting
  • Good communication skills
  • Strong attention to detail
  • Active Serve Safe Manager certificate

Job Qualifications

  • Minimum of 3 years of experience as a sushi cook or similar role

  • High familiarity with kitchen equipment and processes
  • Knowledge of food safety regulations and best practices in a culinary setting

  • Must possess good communication skills and the ability to work collaboratively with diverse staff
  • Strong attention to detail
  • Active Serve Safe Manager certificate

Job Duties

  • Adhere to company standards and service levels to maintain the highest quality of product and service, increase sales and minimize costs
  • Follow company preparation and cooking protocols efficiently, from retrieving items to cooking and final presentation
  • Carve and trim meats and fish for various services, ensuring each dish meets our standards
  • Prepare rice, sushi rolls, sashimi, and other Japanese dishes with precision and attention to detail
  • Ensure freshness and quality of ingredients used in sushi preparation
  • Ensure proper food temperatures are maintained
  • Maintain rigorous food safety and sanitation standards to ensure the safety of our guests and compliance with health regulations
  • Maintain a clean and organized workstation, including proper storage and handling of sushi ingredients and utensils
  • Collaborate with kitchen and restaurant staff to ensure timely delivery of orders
  • Perform opening, closing, and side work duties, and other duties in accordance with company checklists and procedures
  • Assist with inventory management, including monitoring stock levels of sushi ingredients
  • Adhere to portion control guidelines to minimize waste and maintain cost efficiency
  • Stay updated on current trends and techniques in sushi preparation, and continuously strive to improve skills and knowledge
  • Immediately rectify and/or report any unsafe working conditions, accidents, operational needs, and equipment or aspects of the kitchen in need of repair
  • Assist the main restaurant operations as needed
  • Other duties as assigned
