The Sushi and Raw Bar Cook role at The Twelve Thirty Club is a crucial position that combines culinary skill with excellent guest interaction. This cook is responsible for preparing high-quality sushi and raw bar offerings that uphold the club’s stringent standards for taste, presentation, and food safety. Job Duties

  • Expertly cut, slice and filet different types of fish
  • Inspect the quality of fruits, vegetables, and fish used to prepare sushi dishes and inform the chef when quality is substandard
  • Prepare sushi dishes according to established guidelines on quality, portion size, presentation and food safety
  • Maintain a clean work environment to prevent food contamination
  • Take a regular inventory of food supplies and other products
  • Report any problems with kitchen equipment to the chef on duty
  • Sterilize all utensils, instruments and equipment used in sushi preparation before every use
  • Communicate with service staff to ensure that special requests and food allergy considerations are met
  • Comfortable interacting with guests while preparing sushi and raw bar items
