Job Requirements
- High school diploma or equivalent
- Minimum 2 years experience in sushi preparation or similar culinary role
- Knowledge of food safety regulations and hygiene practices
- Ability to work under pressure in a fast-paced kitchen environment
- Strong attention to detail and organizational skills
- Ability to communicate effectively with kitchen staff and management
- Willingness to comply with uniform and personal hygiene standards

Job Duties
- Report to work on time and be present on the sushi station as scheduled
- Maintain uniform and personal hygiene according to PML standards
- Set up the sushi station including all equipment, plateware, ingredients, and supplies
- Assist the Chef or Sous Chef in cutting meat, seafood, and other proteins following PML specifications and quality standards
- Communicate effectively with the Chef about any kitchen problems or discrepancies including equipment function, sanitation, food quality, and inventory
- Support side cooks and assist other kitchen staff in food preparation as assigned
- Supervise kitchen line operations during service, ensuring quality, timing, and plate presentation meets PML standards
- Maintain an organized, clean, smooth-running broil station and kitchen line, minimizing noise and anticipating overloads
- Stock and maintain hot/cold plates at correct temperatures for entrée service
- Monitor par and stock levels of meats, poultry, seafood, condiments, garnishes, equipment, and supplies
- Select appropriate meat cuts for cooking temperatures
- Season, cook, and plate all entrées ensuring adherence to PML quality and presentation standards
- Serve entrées promptly without holding food on the line
