Job Requirements
- High school diploma or equivalent
- Prior experience in sushi preparation or Japanese-style cooking
- Ability to follow detailed recipes and presentation guidelines
- Availability to work flexible hours including weekends and holidays
- Understanding of food safety regulations and sanitation practices
- Ability to stand for extended periods and perform physical tasks
- Strong attention to detail and reliability
Job Qualifications
- Relevant experience in Japanese-style cooking
- Relevant experience working in a sushi restaurant
- Ability to adhere to strict food safety and sanitation standards
- Knowledge of recipe preparation and portion control

Job Duties
- Perform all duties and serve in whatever capacity needed by the business as determined by the manager or chef
- Prepare all food items at the station according to specifications and pre-set time limits
- Follow standard preparation and cooking procedures as designated by the manager or chef
- Follow all recipes, portion controls, and presentation specifications as set by the restaurant
- Coordinate the delivery of all foods within pre-set time standards
- Demonstrate product standards and recipe knowledge daily
- Set up, maintain side work, and/or close stations for scheduled shift including checking, breaking down, and cleaning equipment, prepping food items, stocking food and small wares, and using first in, first out rotation methods
- Prepare and plate station food items to specifications and time limits
- Ensure safety and sanitation standards are maintained
- Use personal protective equipment properly
- Maintain a clean, neat, and well-groomed appearance
- Respond to callbacks and echos to ensure food is prepared on time
- Maintain proper pH for rice and document it in the pH log
- Ensure hot food stays hot and cold food stays cold
- Record all waste on standard forms when it occurs
- Communicate product runouts, equipment issues, and quality problems to management immediately
- Welcome and acknowledge guests according to company standards
- Assist with cleaning, sanitation, and organization of kitchen and storage areas
- Order ingredients and supplies as directed
- Develop and maintain positive working relationships
- Ensure adherence to quality expectations and standards
- Perform additional responsibilities as requested by the chef or manager
