This position is for a skilled Sushi Cook who will be responsible for preparing and executing sushi and other menu items with precision and care. The role demands a high level of attention to cleanliness and sanitation, ensuring that all food served meets the hotel's strict quality standards. The Sushi Cook will work under the guidance of the chef, contributing to a smooth and efficient kitchen operation while maintaining respect for fellow cooks and the overall hotel environment. This is a dynamic role requiring the ability to produce orders quickly and consistently, achieving taste, presentation, and timeliness expectations. The cook must demonstrate competence with various culinary tools and techniques, maintaining a clean work area, and adhering to hotel policies and safety regulations.

The Sushi Cook will be responsible for controlling food cost by managing supplies and inventory effectively. They will assist in setting up the station or prep list in a timely manner, ensuring all supplies necessary for service are ready. Food handling and storage will be conducted properly to meet safety standards. The role includes interaction with other line cooks and participation in team meetings, promoting collaboration to achieve the department's objectives. Flexibility is important, as the position may involve working nights, weekends, overnights, and holidays, as well as assisting in other areas of the hotel as needed. This comprehensive role is ideal for candidates with relevant culinary experience in restaurant or hotel food preparation and a passion for creating authentic and high-quality sushi dishes.

Job Requirements

  • physical ability to frequently stand, walk, talk, and hear
  • ability to use hands for cutting, chopping, handling tools and materials
  • occasional lifting up to 25lbs
  • satisfactory communication skills in English with guests, management, and coworkers
  • ability to provide legible communication
  • basic computer skills

Job Qualifications

  • relevant experience in restaurant or hotel food preparation
  • culinary degree or progressive experience
  • knowledge of basic cooking techniques such as saute, braise, poach, grill, fry, steam
  • ability to demonstrate safe and competent use of all cooking tools including knives, pots, pans, stoves, ovens, grills, slicers, steamers, and sushi equipment
  • strong communication skills to interact professionally with team members
  • ability to abide by hotel policies and procedures

Job Duties

  • control quality and consistency of all food served specializing in sushi
  • ensure that station or relevant prep list is set in a timely manner
  • ensure all supplies necessary for service are in appropriate supply before service
  • assist in controlling food cost
  • demonstrate knowledge of all food items produced by an assigned station
  • handle and store food properly and safely
  • produce all orders consistently, quickly, and in accordance with established quality standards
