The role of Sushi Cook at Zippy's is a vital position within the store’s culinary team. This non-exempt role is stationed at various store locations where the Sushi Cook is responsible for preparing high-quality sushi and related menu items efficiently and consistently, ensuring guest satisfaction is met with every order. Under the direct supervision of store management, the Sushi Cook must follow company recipes, portion controls, and preparation methods precisely to maintain the authenticity and standards of Zippy’s food offerings. The position requires adherence to strict food safety and sanitation procedures to uphold the health standards expected by both the company and guests.

In addition to preparing sushi orders that match guests’ preferences, the Sushi Cook will regularly monitor the quality of all food items, ensuring freshness and appropriateness at all times. The role also involves maintenance of the workspace which includes keeping the sushi bar clean, organized, and supplied with fresh ingredients. This position entails recognizing and reporting any damaged or malfunctioning cooking equipment to management for repair or replacement to ensure smooth operational flow. Job Requirements

  • Meets assigned shift requirements
  • Regularly push, pull, and carry objects
  • Stand and walk on foot for at least 6-8 hours
  • Reach at shoulder level and below waist constantly, above head occasionally
  • Bending downward or forward at waist or knees occasionally
  • Talk and listen to communicate instructions
  • Light to medium work
  • Exerting up to 20 to 50 pounds of force
  • Able to visualize accuracy, neatness, and thoroughness of the work assigned
  • Close vision, distance vision, color vision, peripheral vision, depth perception, and the ability to adjust focus
  • Passed a tuberculosis (TB) skin test within 12 months of the date of hire OR dated/issued at the age of 16 or older
  • Pass a drug screening test

Job Qualifications

  • High school diploma or equivalent preferred
  • Previous culinary experience and/or education preferred
  • Previous experience preparing Japanese menu items preferred
  • Basic math and writing
  • Able to interact with guests and co-workers in a friendly, enthusiastic, and outgoing manner
  • Able to work independently or as part of a team
  • Reading, writing, speaking, and comprehending the English language

Job Duties

  • Prepares orders to the guest’s preference while adhering to company established recipes, portions, and methods
  • Is knowledgeable of and adheres to proper food handling procedures and safety/sanitation guidelines at all times
  • Regularly checks all food items to ensure adequacy and quality at all times
  • Identifies and understands the proper use of cooking tools and equipment, recognizing those in need of repair and reports to the manager for repair/replacement
  • Maintains a safe, sanitary, and organized workspace
  • Replenishes all supplies according to designated quantities and time requirements
  • Minimizes waste and ensures that stock is always fresh by checking dates and rotating stock
