Job Requirements
- High school diploma or equivalent
- 2-3 years of professional sushi cooking experience
- Strong knife skills
- Knowledge of sushi preparation techniques
- Experience in a high-volume kitchen preferred
- Understanding of food safety and sanitation regulations
- Ability to work under pressure
- Excellent communication skills
- Flexibility to work various shifts including evenings, weekends, and holidays
Job Qualifications

Job Duties
- Prepare sushi, sashimi, rolls, and related menu items according to established recipes and standards
- Ensure food quality, freshness, and presentation meet Hyatt brand expectations
- Safely handle and store seafood and ingredients following food safety guidelines
- Set up and maintain the sushi station for service, ensuring cleanliness and organization
- Maintain proper knife care and workstation sanitation
- Communicate effectively with kitchen leadership and front-of-house teams
- Assist with inventory, prep work, and restocking as needed
- Follow all health, safety, and sanitation regulations
- Support a collaborative, team-oriented kitchen environment
