Job Description

We are currently seeking a skilled Sushi Cook to join our kitchen team. This role involves preparing a variety of sushi dishes including sashimi, nigiri, and maki rolls, along with other Japanese specialties. It requires excellent knife skills, knowledge of traditional sushi-making practices, and the ability to manage fresh seafood with care and precision. The Sushi Cook will also be responsible for maintaining the presentation and consistent portion sizes of all dishes served, ensuring each plate meets our restaurant's aesthetic and quality benchmarks.

In addition to food preparation, the Sushi Cook plays a vital role in maintaining a clean and safe kitchen environment by adhering to health and hygiene standards. This includes regular sanitization of tools and workstations, proper ingredient storage, and inventory management. Job Duties

  • Prepare sushi, sashimi, nigiri, maki rolls, and other Japanese dishes according to the restaurant's menu and recipes
  • Ensure that all ingredients, including fish and rice, are fresh and handled with care to maintain the highest quality
  • Maintain excellent knife skills, including filleting fish and preparing cuts of seafood for sushi
  • Ensure that all sushi dishes are beautifully presented, with attention to detail in garnishing, cutting, and arrangement
  • Maintain consistency in portion sizes and presentation to uphold restaurant standards
  • Follow all health and safety regulations to ensure that food is handled, stored, and prepared in a clean and safe environment
  • Maintain cleanliness in the sushi station, including sanitizing cutting boards, knives, and other tools regularly
  • Monitor ingredient levels, especially perishable items such as seafood, and communicate any restocking needs to the kitchen manager
  • Ensure that all ingredients are stored properly to preserve freshness and quality
  • Work closely with kitchen staff and management to ensure efficient kitchen operations and timely delivery of orders
  • Assist in prepping ingredients and maintaining an organized sushi station
