Delano Miami Beach is an iconic luxury hotel in Miami Beach, currently undergoing a significant renovation and redevelopment partnership between Ennismore and Cain International. This highly anticipated project will see the Delano Miami Beach reopened in early 2026, blending historic charm with contemporary luxury to create a reimagined experience that honors its original visionary concept. Featuring 171 rooms and several distinct food and beverage venues, the renovated hotel will maintain its iconic walk-in pool and introduce a new pool on an amenity deck offering breathtaking views of the ocean. As the brand's flagship site, Delano Miami Beach will re-establish itself as a pioneer in luxury lifestyle hospitality.
We are currently seeking a passionate and skilled Sushi Cook to join our esteemed culinary team for the hotel's grand reopening. Reporting to the Chef de Cuisine, this role is integral in providing guests with an elevated dining experience through the preparation, execution, and presentation of refined sushi and Japanese-inspired dishes. The Sushi Cook will be responsible for maintaining impeccable quality, ensuring food safety compliance, and managing the sushi station in a fast-paced, high-volume luxury environment. This position requires a blend of discipline, attention to detail, and an artistic eye for creating visually appealing and delicious culinary offerings. Candidates should have extensive experience working with sushi preparation, knife skills, and possess leadership qualities to support and mentor kitchen staff.
The successful candidate will play a key role in preserving the standards of excellence that Delano Miami Beach is known for. Duties include preparing sushi, sashimi, nigiri rolls, and specialty items with precision; ensuring station readiness; coordinating with other kitchen leadership on daily specials; supporting line cooks; and maintaining cleanliness and organization at all times. This role also requires communication with frontline staff to ensure smooth service flow and guest satisfaction. Job Requirements
- high school diploma or equivalent
- minimum 2-3 years of experience in sushi preparation in a luxury or high-volume restaurant
- strong knife skills
- leadership and mentorship capabilities
- excellent organizational and multitasking skills
- ability to work under pressure and meet deadlines
- proficiency in computer systems such as Microsoft Word, Excel, and Outlook preferred
- ability to read, write, speak, and understand English
- physical ability to stand or walk for eight hours and perform tasks involving twisting, bending, reaching, carrying, pushing, or pulling
- maintain clean and professional appearance
- excellent communication skills
- teamwork and independent work capability
Job Qualifications

- minimum 2-3 years of experience as a sushi cook or chef de partie in a high-end restaurant
- strong knife skills and technical sushi knowledge

Job Duties
- prepare sushi, sashimi, nigiri rolls, and specialty items with consistency and precision
- maintain mise en place and ensure station readiness for service
- follow standardized recipes and presentation guidelines
- monitor product freshness, quality, and proper storage
- execute orders in a timely manner while maintaining impeccable standards
- own and manage the sushi station during service
- coordinate with Sous Chef and Chef de Cuisine on daily features and specials
- support and train line cooks when assigned
- communicate clearly with front of house regarding timing and special requests
- adhere to local health department regulations
- maintain cleanliness and organization of work area at all times
- ensure proper labeling, rotation, and temperature control of products
- participate in inventory counts and waste control initiatives
- assist with receiving and inspecting seafood deliveries
- support cost control by minimizing waste and managing portion control
- uphold company culinary standards and appearance guidelines
- provide lateral service and perform various related tasks as needed to ensure exceptional guest service
- perform routine tasks in the spirit of hospitality and teamwork
