This opportunity is with a dynamic Japanese cuisine restaurant specializing in authentic sushi and related dishes. The sushi cook will be an essential part of the kitchen team, responsible for preparing a diverse range of sushi types including maki, nigiri, and sashimi. This role demands a thorough knowledge of Japanese cuisine preparation techniques, food safety standards, and the ability to work accurately under pressure during service hours. The sushi cook manages food stock, ensures proper hygiene and sanitation in food preparation areas, and collaborates closely with wait staff to accommodate special requests, including food allergies. Responsibilities also include recommending new recipe ideas and specials that align with the restaurant's culinary philosophy. This is a hands-on position where maintaining quality, presentation standards, and consistent portion sizes are critical. Job Requirements

  • High school diploma or equivalent
  • prior experience as a sushi cook or in Japanese cuisine
  • ability to stand for long periods and work in confined spaces
  • ability to lift or carry up to 30 lbs regularly
  • ability to work within extreme temperature ranges
  • strong attention to detail
  • ability to solve practical problems and follow instructions
  • availability to work flexible shifts including weekends

Job Duties

  • Prepare all types of sushi including maki nigiri and sashimi
  • select fresh fruits and vegetables to make high-quality dishes like avocado mango and carrots
  • add additional flavors to sushi rolls with ginger rice vinegar wasabi and soy sauce when appropriate
  • manage food prep activities like boiling rice
  • coordinate with wait staff to ensure proper cooking considering special requests and food allergies
  • prepare appetizers soups and salads that are close to the philosophy of Japanese cuisine
  • monitor food stock and place orders as needed
  • recommend new modern recipes and specials
  • maintain hygiene principles in all cooking areas and clean your space at the end of the shift
  • assume 100% responsibility for quality of products served
  • understand and comply consistently with standard portion sizes cooking methods quality standards and kitchen rules policies and procedures
  • maintain a clean sanitary work-station area including tables shelves walls grills broilers fryers saute burners convection oven flat top range and refrigeration equipment
  • follow proper plate presentation and garnish set up for all dishes
  • handle store and rotate all products properly
  • understand food safety and help control bacteria growth by keeping away from the danger zone
  • understand shelf life and thaw time of a product
  • close kitchen properly and follow the closing checklist for kitchen stations
  • perform other related duties as assigned by sushi chef and executive chef
