We are currently seeking a highly skilled and passionate Sushi Chef / Specialist Cook to join our esteemed culinary team. Job Requirements

  • Minimum of 3 years of experience as a sushi chef or specialist cook in a high-volume Japanese restaurant
  • Expertise in traditional Japanese knife skills and fish preparation
  • Proficiency in preparing various sushi rolls and Japanese appetizers
  • Understanding of food safety and sanitation regulations
  • Ability to work efficiently under pressure
  • Strong attention to detail
  • Excellent communication skills

Job Qualifications

  • Minimum of 3 years of demonstrable experience as a sushi chef or specialist cook in a high-volume, quality Japanese restaurant
  • Expertise in traditional Japanese knife skills and fish preparation (filleting, slicing, portioning)
  • Proficiency in crafting various sushi rolls (maki, nigiri, sashimi, temaki) and other Japanese appetizers
  • Thorough understanding of food safety and sanitation regulations
  • Ability to work efficiently under pressure in a fast-paced kitchen environment
  • Strong attention to detail and commitment to culinary excellence and artistic presentation
  • Excellent communication and interpersonal skills
  • Formal culinary training or certification specializing in Japanese cuisine
  • Experience with menu development and cost control
  • Proven track record of innovation and creativity in sushi preparation

Job Duties

  • Prepare a wide variety of sushi, sashimi, and other Japanese specialty dishes with precision and artistic presentation
  • Manage and maintain a clean, organized, and sanitary sushi bar and prep area in compliance with health and safety regulations
  • Order, receive, and properly store fresh fish and other ingredients, ensuring optimal quality and minimal waste
  • Monitor inventory levels and communicate needs to management to ensure adequate stock
  • Develop and introduce new and innovative sushi rolls and Japanese dishes to enhance our menu
  • Train and mentor junior kitchen staff on sushi preparation techniques and best practices
  • Interact with guests at the sushi bar, providing an engaging and educational dining experience
  • Adhere to all company policies and procedures, including those related to food safety and customer service
