The Sushi Chef position at Shakou is a pivotal role responsible for the preparation, production, and presentation of all sushi menu items, including but not limited to sushi rolls, maki, nigiri, and sashimi. The role requires an individual who can follow precise recipes and portion controls, ensuring every dish meets Shakou's stringent quality and safety standards. The Sushi Chef will work closely with the Head Sushi Chef and Executive Chef to coordinate food preparation and plate presentation, making sure that every order is fulfilled accurately and efficiently.

Job Requirements
- No previous sushi chef experience necessary but preferred
- Willing to shadow another sushi chef as training depending on experience
- Must pass a written test regarding Shakou's menu
- Ability to follow prescribed portioning controls and maintain food safety and quality standards
- Food Handlers certificate required
- Ability to comply with workplace safety and sanitation guidelines
- Maintain neat and clean appearance with good personal hygiene

Job Duties
- Prepare food items and ingredients for menu items including sushi, maki, nigiri, and sashimi according to recipes and special requests
- Follow all prescribed portioning controls and par levels and maintain food safety and quality standards
- Prepare plate presentations correctly set up according to tickets or directions by Executive Chef or Head Sushi Chef
- Maintain open communication with Head Sushi Chef regarding concerns or challenges
- Wash and clean raw food products and manage refrigerated product hold times
- Inspect and clean food preparation areas and equipment to ensure safe and sanitary food-handling practices
- Set up, operate, break down, and clean all kitchen equipment
- Assist with stocking and organizing deliveries and kitchen stations
- Assist Head Sushi Chef as directed
- Perform other duties as assigned
