As a Sushi Chef within Flagship Restaurant Group, you will be part of a team that brings exceptional dining experiences to life through meticulous preparation and presentation of sushi and other Japanese cuisine. This role offers an average total earning potential ranging from $25 to $28 per hour, including base pay and tip out, with actual earnings varying by shift and business volume. While previous experience as a Sushi Chef or similar kitchen role is preferred, it is not required, as Flagship provides a comprehensive training program. This program ensures that individuals with strong knife skills, attention to detail, and a willingness to learn can succeed and grow in this role.

The Sushi Chef position requires precision and care in preparing sushi, sashimi, rolls, and other menu items strictly following recipes, presentation standards, and restaurant specifications. Maintaining ingredient quality, proper storage, and safe handling is vital, particularly due to the nature of raw seafood and other perishable items. Working in a fast-paced, high-volume environment necessitates maintaining food quality, consistency, and adherence to sanitation standards at all times. Collaboration with kitchen and service team members is essential to ensure a smooth and efficient dining experience for guests.

This role also involves maintaining cleanliness and organization in the sushi bar and kitchen area, assisting in inventory management by reporting product levels and quality concerns to leadership, and helping with prep, restocking, breakdown, and cleaning duties. Excellent communication skills are fundamental, enabling you to work well with team members and engage professionally and warmly with customers. The schedule flexibility is required, including availability for evenings, weekends, and holidays, thus supporting the diverse operational needs of the restaurant.

Job Qualifications

Job Duties

  • Prepare sushi, sashimi, rolls, and other menu items according to recipes, presentation standards, and restaurant specifications
  • Ensure the quality, freshness, proper storage, and safe handling of ingredients, including seafood, rice, produce, sauces, and garnishes
  • Maintain cleanliness, organization, and proper stocking of the sushi bar and kitchen area throughout prep and service
  • Adhere to food safety, sanitation, allergy awareness, cross-contact prevention, and raw seafood handling standards at all times
  • Collaborate with kitchen and service team members to ensure timely, accurate, and efficient service
  • Assist with daily prep, station setup, restocking, breakdown, and end-of-shift cleaning duties
  • Assist in inventory management by communicating product levels, quality concerns, and ordering needs to leadership
  • Provide excellent customer service and interact with guests in a friendly and professional manner
