The role of Sushi Chef at JOEY Restaurants is a critical component of their culinary team, responsible for preparing and presenting sushi menu items that consistently meet world-class standards. The Sushi Chef will engage in prepping all sushi ingredients to fulfill prep lists, maintain par levels, and adhere strictly to recipe standards. Key responsibilities include utilizing a variety of prep and cooking methods such as washing, chopping, cutting, grilling, roasting, sautéing, and frying, all while coordinating seamlessly with other kitchen stations. Maintaining a clean, sanitary, and safe work environment is crucial, with duties also encompassing cleaning, organizing, and maintaining refrigerators, cooler drawers, ovens, and storage areas. The Sushi Chef will take charge of completing assigned side work, stock management, and closing duties, contributing to the smooth operation and success of the team. Job Duties
- Prep all ingredients and food products to fulfill prep lists, par levels, and recipe standards
- utilize various prep and cooking methods to ensure the quick, precise creation of our menu items in accordance with JOEY recipes
- maintain prep and cooking areas in a clean, sanitary, and safe manner
- clean, organize, and maintain refrigerators, cooler drawers, ovens, prep and dry storage areas
- complete assigned side work and closing duties to set your team up for success
- follow all instructions and guidelines for safe usage of kitchen equipment and cleaning compounds
- follow all food service and handling safety precautions and procedures
