Job Requirements

  • High school diploma or equivalent
  • Minimum of 1 year experience working on a sushi line
  • Demonstrated proficiency in knife handling and fish fabricating
  • Knowledge of food safety standards including HACCP compliance
  • Ability to work evenings, weekends, and holidays as required
  • Strong communication and teamwork skills

Job Qualifications

  • 1-3+ years of experience on a sushi line, preferably high-volume
  • Proven knife skills and fish butchery with consistent, beautiful cuts
  • Proficient rice discipline, tight rolling, and plating finesse under pressure
  • Working knowledge of HACCP and safe raw handling standards
  • Professionalism, punctuality, and a strong team mindset
  • Bilingual skills in English, Spanish, or Japanese are a plus

Job Duties

  • Prep and execute nigiri, sashimi, classic and signature rolls to spec during service
  • Fabricate fish including portioning, skinning, pin-boning
  • track yields and waste
  • Cook and season rice to standard
  • maintain vinegar ratios and rice temperature logs
  • Uphold HACCP standards including cold-chain, TCS, parasite-destruction documentation, allergen control
  • Maintain an immaculate station including knife care, sanitation, and cross-contact prevention
  • Communicate tickets clearly
  • sync with expo and back-of-house for timing and quality
  • Contribute to specials and seasonal research and development with Cape Cod and Floribbean influences
