Job Requirements

  • Ability to follow exact recipe ingredients and procedures
  • Ability to perform fish fabrication techniques
  • Ability to maintain food safety and sanitation standards with attention to detail
  • Skills in cutting, chopping, slicing, and filleting different types of produce and proteins
  • Minimum of 3 years of related sushi restaurant experience
  • Availability for AM or PM shifts
  • Valid NYC Food Protection Course Certification preferred

Job Qualifications

  • Minimum of 3 years work experience in a sushi restaurant
  • Ability to prepare fish including fishmongery and fish butchery
  • Preferred NYC Food Protection Course Certification
  • Previous experience in New York restaurants is a plus
  • Strong attention to detail and commitment to food safety standards
  • Effective communication and teamwork skills
  • Leadership qualities and ability to work independently and as a team member

Job Duties

  • Follow exact recipe ingredients and procedures for all sushi items including maki, temaki, nigiri, sashimi, poke, and crudo
  • Perform a variety of fish fabrication techniques including cutting, chopping, slicing, and filleting
  • Maintain the highest standards of food safety and sanitation practices
  • Ensure attention to detail in food preparation and presentation
  • Manage high volume of orders efficiently in a fast-paced environment
  • Collaborate as a team player while demonstrating leadership qualities
  • Adapt to AM and PM shift hours effectively
