The Sushi Chef at Orbital Kitchens plays an essential role in executing an authentic sushi menu that includes Maki, Temaki, Nigiri, Sashimi, Poke, and Crudo. This role requires meticulous adherence to recipe ingredients and procedures to ensure consistency and quality across all dishes. Beyond basic sushi preparation, the position involves skilled fish fabrication techniques such as cutting, chopping, slicing, and filleting various types of fish and proteins, demanding precision and expertise. The role also emphasizes food safety and sanitation standards as top priorities, with keen attention to detail necessary to maintain a safe and clean kitchen environment. Work hours are structured around two primary shifts: the AM shift from 9 or 10 am to 6 pm and the PM shift from 6 pm to 2 or 3 am. These schedules accommodate busy service times and demand a professional flexible enough to operate effectively in both scenarios. Candidates are preferred to have certification in the NYC Food Protection Course and at least three years of experience working in a Sushi restaurant setting, with additional experience in New York restaurants regarded as a plus.
