The role of Sushi Chef at Trapper's Sushi is a fantastic opportunity for an experienced, detail-oriented culinary professional who takes pride in their craft and aims to deliver memorable dining experiences. This position involves preparing sushi rolls, nigiri, sashimi, and specialty dishes to company standards, ensuring consistency in flavor, presentation, and freshness. The Sushi Chef will work in an open, guest-facing setting, directly interacting with customers and coordinating closely with both the kitchen and front-of-house teams to maintain smooth operations. The candidate should be skilled with knives and other kitchen tools and have a deep understanding of food safety, sanitation, allergen awareness, and FIFO inventory management. The environment is fast-paced and high-volume, requiring the ability to balance speed, precision, and service quality consistently. Job Requirements

  • Restaurant-based position performed in a busy kitchen and guest-facing sushi bar
  • Ability to stand and walk for extended periods throughout the shift
  • Ability to perform repetitive chopping, cutting, rolling, plating, reaching, and grasping motions
  • Ability to regularly bend, reach, twist, push, and pull
  • Ability to lift, carry, push, or pull up to 30 pounds
  • Ability to safely operate knives and other commercial kitchen equipment
  • Ability to work around varying temperatures, food allergens, raw seafood, sharp tools, wet surfaces, and moderate-to-high noise levels
  • Ability to work evenings, weekends, holidays, and variable shifts based on business needs
  • Ability to perform the essential functions of the position, with or without reasonable accommodation

Job Qualifications

  • One to three years of professional sushi preparation experience
  • Experience preparing sushi rolls, nigiri, sashimi, and specialty dishes
  • Strong knife skills and knowledge of sushi-preparation techniques
  • Understanding of food safety, sanitation, cross-contamination prevention, allergen awareness, and FIFO procedures
  • Ability to work efficiently and consistently in a fast-paced, high-volume environment
  • Strong attention to detail and commitment to quality presentation
  • Ability to provide friendly, professional service in a guest-facing environment
  • Positive attitude with strong teamwork and communication skills
  • Ability to follow recipes, portion standards, and preparation procedures
  • Ability to work independently while communicating effectively with the restaurant team
  • Ability to work evenings, weekends, holidays, and variable shifts based on business needs
  • Washington State Food Worker Card required or must be obtained within 14 days of beginning work

Job Duties

  • Prepare sushi rolls, nigiri, sashimi, and specialty dishes according to company recipes and presentation standards
  • Use knives and other kitchen equipment safely and skillfully to portion and prepare ingredients
  • Maintain consistency in flavor, quality, portioning, freshness, and presentation
  • Inspect ingredients before use and promptly report quality or food-safety concerns
  • Properly store, label, date, and rotate ingredients following FIFO procedures
  • Maintain a clean, organized, and fully stocked sushi station throughout each shift
  • Follow all sanitation, food-handling, allergen-awareness, and workplace-safety requirements
  • Provide welcoming and knowledgeable service to guests seated at or interacting with the sushi bar
  • Answer guest questions regarding menu items and communicate allergy or dietary requests appropriately
  • Collaborate with kitchen and front-of-house teams to maintain smooth service and accurate order execution
  • Monitor inventory, restock supplies, and assist with prep work and opening or closing responsibilities
  • Minimize food waste by following recipes, portion standards, and proper storage procedures
  • Support the training and development of new sushi employees as assigned
