Job Description

We are currently seeking a dedicated and skilled Sushi Chef to join our team. This position plays a critical role in upholding the signature quality and artistry synonymous with Trapper's Sushi. As a Sushi Chef, you will be responsible for preparing and presenting sushi rolls, nigiri, sashimi, and specialty dishes with precision, creativity, and an unwavering attention to detail. You will work closely with kitchen and front-of-house teams to maintain a smooth service flow and ensure customer satisfaction. This role requires a commitment to maintaining strict sanitation and food safety standards, managing ingredient inventory efficiently, and providing exceptional guest interactions at the sushi bar.

The Sushi Chef position is a non-exempt role offering competitive hourly pay starting at $19.75 plus tips. Job Requirements

  • 1-3 years of professional sushi preparation experience preferred
  • Strong knife skills and in-depth knowledge of sushi preparation techniques
  • Ability to work efficiently in a fast-paced, high-volume environment
  • Excellent attention to detail and consistency
  • Positive attitude, strong teamwork, and communication skills
  • Washington State Food Handler's Permit required prior to hire
  • Must be available to work evenings, weekends, and holidays as business needs require

Job Duties

  • Prepare sushi rolls, nigiri, sashimi, and specialty dishes according to company standards and recipes
  • Ensure all ingredients are properly stored, labeled, and rotated following FIFO (First In, First Out) procedures
  • Maintain a clean and organized workstation and uphold all sanitation and food safety requirements
  • Provide exceptional guest interactions at the sushi bar, answering questions and creating a memorable experience
  • Collaborate with kitchen and front-of-house teams to maintain smooth service flow and accurate order execution
  • Monitor inventory, restock supplies, and assist with prep work as needed

  • Support training of new sushi staff members and contribute to team morale through leadership by example
