The role available at One Hospitality is for an Executive Sushi Chef to lead the culinary direction of SPICE, one of the company’s newest concepts. The Executive Sushi Chef will be responsible for curating a premium sushi menu that not only reflects traditional Japanese culinary techniques but also embraces modern and innovative approaches to sushi preparation. Candidates for this position will drive the development and execution of the sushi program at SPICE, bringing creativity and technical precision to every dish served. The successful Executive Sushi Chef will prioritize the use of fresh, seasonal ingredients, ensuring product integrity and consistency from the moment ingredients are received to the final presentation on the plate. Working closely with the Executive Chef and Culinary Director, the sushi chef will help refine the menu offerings and elevate the overall dining experience.
This role requires leadership abilities to oversee and mentor sushi and kitchen teams, upholding the highest standards of kitchen safety, cleanliness, and sanitation. Moreover, the Executive Sushi Chef must excel in managing inventory and proper storage, optimizing operational efficiency without compromising quality. This high-pressure, fast-paced position demands exceptional skills in preparing various sushi styles including sashimi, nigiri, and maki, cutting and filleting fish with expert precision.

Job Requirements
- Minimum of 2-3 years of professional sushi chef experience
- culinary degree or equivalent formal training
- proficiency in English communication verbal and written

- prepare top-quality sushi dishes including sashimi, nigiri, and maki

- oversee sushi and kitchen teams at the highest standards
- sterilize all utensils, tools, and equipment before each use
- monitor inventory, freshness, and proper storage of ingredients
- collaborate with Executive Chef and Culinary Director to ensure an exceptional customer experience and menu development
