Job Requirements

  • Ability to stand for extended periods
  • Comfortable working in a fast-paced kitchen environment
  • Manual dexterity for knife work and delicate preparations
  • Hours Wednesday-Sunday 2-10pm

Job Qualifications

  • Proven experience as a sushi chef or similar role in a high-volume or fine dining environment
  • In-depth knowledge of traditional and modern sushi preparation rice techniques and knife skills
  • Strong understanding of food safety hygiene and handling raw fish
  • Creative approach to menu development and presentation
  • Excellent organizational and time management skills
  • Ability to work under pressure while maintaining attention to detail
  • Food safety certificate preferred in VA
  • Culinary degree or relevant training preferred

Job Duties

  • Prepare a variety of sushi including nigiri sashimi maki rolls and specialty items with precision and artistry
  • Ensure freshness and quality of all fish seafood rice and other ingredients
  • Work with Executive Chef and Executive Sous Chef to create a fresh enticing menu that changes regularly for members
  • Maintain clean and organized workstations in compliance with health and safety regulations
  • Collaborate with the culinary team to develop seasonal and specialty sushi menus
  • Engage with guests when appropriate explaining dishes and accommodating special requests
  • Manage inventory levels monitor product rotation and minimize waste
  • Train and mentor junior kitchen staff in sushi preparation and knife techniques
  • Uphold consistent portion sizes and presentation standards
