This job opening is for a Sushi Chef position at Sushi Roku Santa Monica. The role is part-time and tipped, ideal for culinary professionals who have a passion for Japanese cuisine and are looking to join a dynamic and fast-paced work environment. The Sushi Chef will be responsible for preparing a variety of sushi dishes and sauces, ensuring food safety and quality standards, and maintaining the cleanliness and efficiency of the sushi bar area. Job Requirements

  • Two years of previous experience in a high-end, high-volume restaurant
  • skilled in making traditional sushi and sushi rolls
  • knowledge of Japanese cuisine and cooking techniques
  • ability to multitask and work efficiently under pressure
  • available to work three shifts
  • strong communication skills
  • positive and upbeat attitude
  • flexible availability including days, nights, weekends
  • valid Food Handler Card
  • ability to stand for long periods and lift up to 50 lbs
  • must be 18 years or older

Job Qualifications

  • Minimum two years of experience in a high-end, high-volume restaurant
  • experienced and highly skilled in traditional sushi and sushi roll preparation with comprehensive knowledge of Japanese cuisine, sake, fish, seafood, and cooking techniques
  • strong communication skills with guests and teammates
  • positive and upbeat attitude with a strong work ethic
  • ability to multitask and perform efficiently under pressure

Job Duties

  • Prepare various types of sushi dishes and sauces according to guidelines on quality, portion size, presentation, and food safety
  • have full knowledge of the restaurant's food offerings and beverage program
  • possess a strong familiarity with food service regulations and proper food handling procedures
  • be fluent in cooking methods, quality standards, kitchen rules, and restaurant policies
  • inspect quality of fruits, vegetables, and fish to ensure consistency
  • follow proper plate presentation and prepare garnishes for dishes
  • stock and maintain sufficient food product levels at line stations to assure smooth service
  • sterilize utensils, instruments, and equipment before use
  • handle, store, and rotate products properly using FIFO method
  • perform station opening, closing, and side work duties each shift
  • maintain clean and sanitary sushi bar workstation
  • monitor food production areas for safety and sanitation compliance
  • report kitchen equipment issues to the manager on duty
  • fill in as needed to ensure efficient restaurant operation
  • create a welcoming environment for guests by greeting, thanking, and saying goodbye
  • demonstrate excellent customer service skills and remain calm under pressure
  • embody exceptional service and hospitality
