The Sushi Chef position is pivotal within this engaging restaurant environment. This role involves preparing a variety of sushi items and sauces in line with the restaurant’s food preparation and service guidelines. The Sushi Chef primarily works in front of guests at the sushi bar, contributing not only to the quality of the food but also to the ambiance by ensuring an inviting and enjoyable interaction. Key responsibilities include preparing ingredients like meats, seafood, poultry, and vegetables using various kitchen equipment such as broilers, ovens, and grills. In this role, the Sushi Chef maintains stringent cleanliness and sanitation standards, overseeing the sushi bar area and associated equipment. They monitor portion sizes to adhere to company standards, handle food safety practices including proper storage, labeling, and rotation according to public health regulations. Adherence to company policies on food presentation, garnishing, and safe handling of raw foods is vital. The role also requires assisting with sushi preparation tasks, coordinating with kitchen staff for smooth operations, and reporting any maintenance or inventory issues to management.

Additionally, this position includes responsibilities such as participating in special guest occasion celebrations, following alcohol service guidelines, and maintaining a professional appearance and courteous manner. The Sushi Chef may also be requested to engage with guests through photography to enhance the dining experience and support marketing efforts.

The restaurant offers a training program for sushi chefs, providing a path for skill development and mastery of cooking procedures. A successful candidate will have completed or be willing to complete this training and have experience or a strong interest in sushi preparation. Culinary education is considered a valuable asset. Job Duties

  • Greets and welcomes guests upon arrival to the sushi bar/lounge area
  • prepares a variety of meats, seafood, poultry, vegetables, and other food items for cooking using kitchen equipment
  • responds promptly and courteously to guest requests and provides information about food
  • ensures guests are satisfied with food quality and service
  • performs shift opening and closing duties including cleaning cases, boards, equipment, and floors
  • complies with company standards on food portioning, cooking methods, quality, recipes, safety and sanitation
  • maintains kitchen, sushi counters, equipment, refrigeration and food storage clean and organized
  • reports any equipment or maintenance issues to the manager and head sushi chef
  • adheres to company guidelines on food presentation and garnishes
  • properly handles ready to eat food served raw
  • handles, stores, labels, and rotates foods according to safety and health laws
  • follows Ecosure Best Practices for food handling and storage
  • uses knives, utensils, and equipment to prepare food
  • keeps head sushi chef informed of inventories and any defective products
  • maintains a clean and neat appearance
  • notifies manager of dissatisfied guests or accidents
  • adheres to guidelines on alcoholic beverage service
  • assists with sushi preparation and helpers as required
  • participates in guest special occasion celebrations
  • may be asked to photograph or be photographed with guests
  • performs other duties as assigned
