The role of the Sushi Chef at Momiji is pivotal in maintaining the restaurant’s reputation for exceptional cuisine and customer satisfaction. This part-time position requires a culinary professional skilled in preparing authentic sushi and various Japanese dishes according to specific recipes and customer preferences. The Sushi Chef will be responsible for operating in both the sushi bar and the back-of-house kitchen areas to ensure that all food is prepared safely, efficiently, and meets Momiji's high standards. Attention to detail is crucial as the chef must follow exact recipes to maintain consistency in flavor and presentation, ensuring each dish is visually appealing and garnished to enhance the dining experience.
In addition to food preparation, the Sushi Chef plays a vital role in maintaining food safety and sanitation standards, handling and storing ingredients properly, and assisting with inventory tasks such as stocking, ordering, and communicating ingredient needs to the Head Sushi Chef to minimize waste and spoilage. The role also involves collaborating closely with other kitchen staff and servers to ensure smooth kitchen operations and exceptional service delivery. A successful candidate will demonstrate the ability to multitask effectively in a fast-paced environment, maintain a positive attitude, and communicate clearly within a team setting. Job Duties
- Operates in the sushi bar and/or back of the house, ensuring that food is prepared safely, effectively, and according to specifications and or requests
- Ensure ingredients and final products are fresh and complete
- Follows recipes, including measuring ingredients, weighing, and mixing ingredients
- Bakes, grills, steams, boils, fries, and chops
- meat, seafood, fruits, vegetables, and grains
- Presents and garnishes final dishes so that they are visually attractive
- Maintains a clean and safe work environment
- Contributes to stocking, ordering, and purchasing of ingredients, ensuring that the necessary ingredients are available and as fresh as possible while also minimizing spoilage/waste by communicating needs to the Head Sushi Chef
- Communicates any issues with kitchen equipment, utensils, or other operating supplies to the Head Sushi Chef
- Handles and stores different types or ingredients in appropriate ways
- Maintains food and safety sanitation standards, policies, and procedures
- Assists the serving staff as needed
- Assists other kitchen staff as needed
- Cleans outside of kitchen, such as the dining room as needed
- Other duties as assigned
