The role of a Sushi Chef at Momiji is integral to maintaining the high standards that the brand has built over the years. A Sushi Chef at this establishment is responsible for the meticulous preparation of ingredients, presenting dishes that are as visually appealing as they are flavorful, and ensuring that all food is prepared in accordance with the restaurant's recipes and customer specifications. Working either behind the sushi bar or in the kitchen, the Sushi Chef operates in a fast-paced environment where precision, cleanliness, and teamwork are essential. This role involves a hands-on approach to baking, grilling, steaming, boiling, frying, and chopping a variety of ingredients including seafood, meats, vegetables, and grains. Additionally, the Sushi Chef plays a critical role in inventory management by assisting with stocking, ordering, and purchasing of ingredients to maintain freshness while minimizing waste. This position does not offer telework, flexible scheduling, or additional holidays beyond the established company policy. - Exposure to extreme heat, steam, and cold present in a kitchen environment
- Must have manual dexterity to cut and chop foods and perform other related tasks

Job Duties
- Operates in the sushi bar and\/or back of the house, ensuring that food is prepared safely, effectively, and according to specifications and or requests
- Ensure ingredients and final products are fresh and complete
- Follows recipes, including measuring ingredients, weighing, and mixing ingredients
- Bakes, grills, steams, boils, fries, and chops
- meat, seafood, fruits, vegetables, and grains
- Presents and garnishes final dishes so that they are visually attractive
- Maintains a clean and safe work environment
- Contributes to stocking, ordering, and purchasing of ingredients, ensuring that the necessary ingredients are available and as fresh as possible while also minimizing spoilage\/waste by communicating needs to the Head Sushi Chef
- Communicates any issues with kitchen equipment, utensils, or other operating supplies to the Head Sushi Chef
- Handles and stores different types or ingredients in appropriate ways
- Maintains food and safety sanitation standards, policies, and procedures
- Assists the serving staff as needed
- Assists other kitchen staff as needed
- Cleans outside of kitchen, such as the dining room as needed
- Other duties as assigned
