The Sushi Chef role at Benihana is a pivotal position responsible for preparing sushi items and sauces in line with the restaurant's food preparation and service standards. This position plays a key part in enhancing guest experiences by working visibly at the sushi bar, engaging with guests to create a fun, welcoming, and memorable interaction. The Sushi Chef ensures the highest standards of food quality and presentation, adhering strictly to safety and sanitation protocols. Responsibilities include greeting guests, preparing a variety of fresh ingredients for sushi, maintaining cleanliness and organization of the sushi bar and equipment, and assisting with sushi helper duties as needed. Additionally, the Sushi Chef performs opening and closing duties, monitors food portioning, and contributes to a positive team environment by supporting guest special celebrations and upholding company guidelines on alcohol service. - Must successfully pass the company’s sushi chef training program and cooking procedures
- previous experience as sushi chef highly desirable

Job Duties
- Greets and welcomes guests upon arrival to the sushi bar
- lounge area
- prepares a variety of meats, seafood, poultry, vegetables and other food items for cooking using kitchen equipment such as broilers, ovens, grills, and fryers
- responds promptly and courteously to guest requests and provides information about food
- ensures guests are satisfied with food quality and service
- performs shift opening and closing duties including cleaning neta cases, cutting boards, equipment, and floors
- maintains kitchen, cooking areas, sushi counters, kitchen equipment, refrigeration units and food storage areas clean, sanitary, and organized
- reports any kitchen/sushi equipment or maintenance issues to the manager on duty and head sushi chef
