Within its Food and Beverage (F&B) division, Caldera House upholds rigorous standards in culinary excellence, aiming to exceed guest expectations in every interaction. The role of the Sushi Chef is paramount in delivering this vision, serving as a strategic partner in crafting an unforgettable hospitality experience for guests, members, and visitors alike. The Sushi Chef position is more than just preparing food; it embodies the artistry and precision needed to showcase authentic sushi dishes that meet the hotel's high standards for quality, presentation, and food safety.

Reporting under the guidance of the Sushi Chef or Sushi Sous Chef, the Sushi Cook is responsible for preparing a variety of sushi items, including rolls, nigiri, and sashimi, with strict adherence to recipes, portion sizes, and presentation guidelines. This position requires skilled fish cutting, slicing, filleting, and precise handling of raw seafood, ensuring each dish not only tastes exceptional but is visually appealing and safe for consumption. The Sushi Cook also plays an essential role in maintaining cleanliness and organization at the sushi station, following all food safety protocols, and supporting daily kitchen operations including prep work and inventory management.

This role is best suited for individuals who have previous experience in sushi preparation and are passionate about culinary arts within a fast-paced, dynamic hospitality setting. Job Requirements

  • Availability to work during business hours including weekends and evenings
  • Previous experience as a sushi cook or similar kitchen role preferred
  • Knowledge of sushi preparation techniques and knife skills

  • Ability to work in a fast-paced environment

  • Ability to stand for long periods and lift moderate weight

Job Duties

  • Cut slice and fillet different types of fish
  • Portion and handle raw fish and seafood with precision
  • Prepare sushi rolls nigiri sashimi and other menu items according to recipes and standards
  • Prepare various types of sushi dishes according to established guidelines on quality portion size presentation and food safety
  • Maintain cleanliness and organization of the sushi station
  • Follow all food safety and sanitation guidelines including proper storage and handling of raw fish
  • Assist with prep work sauces garnishes vegetables etc.
  • Monitor inventory levels and communicate shortages to supervisors
  • Ensure all dishes are presented neatly and meet quality standards
  • Work efficiently during busy service periods
