The role of Sushi Chef at Trapper's Sushi involves preparing and presenting a variety of sushi rolls, nigiri, sashimi, and specialty dishes with precision, creativity, and strict adherence to company standards. This position requires a combination of culinary skill, artistic flair, and a strong attention to detail to ensure every dish meets the restaurant's high standards for quality, freshness, presentation, and consistency. The Sushi Chef plays an essential part in shaping guests' dining experiences through both the food and direct interaction at the sushi bar. Responsibilities extend beyond food preparation to include maintaining cleanliness, adhering to food safety protocols, monitoring inventory, collaborating with kitchen and front-of-house teams, and mentoring new staff members. Working in a fast-paced and high-volume environment, the Sushi Chef must be efficient, skilled with knife techniques, and have the ability to manage multiple tasks while maintaining a positive attitude and excellent teamwork.
This is a non-exempt position paid hourly plus tips with a competitive wage ranging from $19.75 to $22.75 per hour. Employees are offered substantial benefits including medical insurance predominantly employer-paid after 60 days, a 401(k) plan with company match after one year of service, voluntary dental and vision coverage, paid sick leave in compliance with Washington state laws, employee meal discounts, and access to an Employee Assistance Program (EAP). - 1-3 years of professional sushi preparation experience preferred
- Strong knife skills and in-depth knowledge of sushi preparation techniques
- Ability to work efficiently in a fast-paced, high-volume environment
- Excellent attention to detail and consistency
- Positive attitude, strong teamwork, and communication skills
- Washington State Food Handler's Permit required prior to hire
- Must be available to work evenings, weekends, and holidays as business needs require

Job Duties
- Prepare sushi rolls, nigiri, sashimi, and specialty dishes according to company standards and recipes
- Ensure all ingredients are properly stored, labeled, and rotated following FIFO (First In, First Out) procedures
- Maintain a clean and organized workstation and uphold all sanitation and food safety requirements
- Provide exceptional guest interactions at the sushi bar, answering questions and creating a memorable experience
- Collaborate with kitchen and front-of-house teams to maintain smooth service flow and accurate order execution
- Monitor inventory, restock supplies, and assist with prep work as needed
