In this role, Hai Hospitality is seeking skilled and passionate Sushi Chefs to join their team at one of their renowned Japanese cuisine restaurants, including Uchi, Uchiko, and Uchiba. As a Sushi Chef, you will be a vital member of the culinary team, responsible for mastering and perfecting sushi techniques under the guidance of experienced chefs. This role requires a genuine passion for food and beverage, teamwork, humility, and an eagerness to learn and grow. You will acquaint yourself with the restaurant’s menu and current specials, develop expertise in various sushi stations, and actively participate in crafting unique dishes to be featured on the menu and specials page. Engaging with guests at the sushi bar is also a key component, where you will take orders, explain dishes, and cultivate an exceptional dining experience.

Job Requirements

  • Must be able to effectively communicate with guests and other employees
  • Detect and identify safety issues and comply with safety guidelines and standards
  • Lift and carry trays, dishes, equipment, and goods up to 50 lbs, stock inventory, and perform restocking duties
  • Must have the ability to stand and walk for extended periods
  • Bend, stoop, and reach to access various areas and items
  • Ability to work in a fast-paced, high-pressure environment
  • Ability to work in a variety of temperatures, both hot and cold
  • Lift, push, or pull objects such as tables and chairs to reconfigure seating arrangements
  • Ability to use kitchen equipment safely and efficiently, such as ovens, grills, and knives
  • Maintain a neat and organized workspace, including proper storage of supplies and cleaning of surfaces
  • Move quickly and efficiently to respond to customer needs
  • Ability to work in close proximity to coworkers in a crowded kitchen or serving area
  • Tolerate exposure to potential allergens and food odors

Job Duties

  • Acquaint yourself with the menu, current specials, and Japanese cuisine
  • Learn and perfect sushi techniques under the guidance of skilled Chef teams
  • Understand proper handling and waste reduction of product
  • Interact with guests at the sushi bar, take orders, explain dishes, and cultivate an amazing experience
  • Learn various sushi stations and progress as knowledge and skills grow
  • Collaborate with teams to create dishes showcased on specials page and core menu
