The role of Sushi Chef at Trapper's Sushi is a specialized position focused on the preparation and presentation of sushi rolls, nigiri, sashimi, and specialty dishes. This job requires a meticulous approach, combining technical knife skills with creativity to ensure every dish meets the restaurant’s high standards for quality, freshness, presentation, and consistency. Working closely with both the kitchen and front-of-house teams, the Sushi Chef plays a critical role in maintaining smooth service flow while creating a memorable experience for guests directly at the sushi bar.
This position demands a professional with 1 to 3 years of sushi preparation experience, capable of operating effectively under pressure in a high-volume kitchen. The Sushi Chef is responsible not only for crafting exceptional dishes but also for maintaining proper food safety and sanitation practices, including proper storage and rotation of ingredients based on FIFO procedures. Additionally, the role involves monitoring inventory, assisting with prep work, and supporting team members, including training new sushi staff to uphold Trapper's Sushi’s standards and core values.
Compensation for this role starts at $18.50 per hour depending on experience, plus tips. The position is non-exempt under the Fair Labor Standards Act, with eligibility for overtime pay as applicable.
