Job Requirements

  • High school diploma or equivalent
  • at least three years experience as a specialty sushi chef or similar position
  • advanced knife skills
  • working knowledge of Japanese seafood techniques
  • comprehension of English both oral and written
  • solid knowledge of health and safety procedures
  • solid knowledge of sanitation practices
  • ability to stand and walk during 6 to 8 hour shifts
  • ability to reach, bend, stoop, and wipe
  • ability to lift and carry supplies and equipment up to 60 pounds
  • professional appearance and demeanor

Job Duties

  • Practice, regulate, and communicate purchasing, receiving, inventory control, and purveyor relationships
  • train and supervise servers and restaurant brand staff in line with company standards
  • develop and practice proficiency in systems pertinent to sushi such as Compeat, Revinate, Avero
  • engage in relevant research and development opportunities to bring new ideas, follow trends, and improve menu offerings
  • maintain positive guest relations at all times
  • ensure guests have pleasurable, exciting, and satisfying experiences
  • resolve guest complaints ensuring guest satisfaction
  • anticipate guest needs, respond, acknowledge, and interact with guests even when busy
  • maintain menu knowledge and attention to detail in plate presentation
  • ensure restaurant staff are informed of menu updates, feature offerings, and product changes
  • apply solid knowledge of seafood and food products skillfully with culinary techniques
  • apply comprehensive cooking techniques
  • assist chef, sous chef, and staff as needed for execution of service
  • work as a team assisting employees and guests
  • assist overall operations by controlling food and labor costs in the servers and restaurant brand department
  • monitor and maintain cleanliness, sanitation, and organization of assigned work areas at all times
  • ensure that work areas are stocked with correct tools, supplies, and equipment to meet business demands
  • ensure kitchen and work area equipment is properly maintained and functioning
  • comply with all departmental policies, procedures, and standards
