The Sushi Chef role at Momiji is an essential position responsible for preparing ingredients and assembling sushi in line with menu or customer specifications to ensure consistency and quality. The chef is tasked with following specific recipes, ensuring each dish is not only delicious but also visually appealing by incorporating thoughtful garnish and presentation techniques. This role requires effective communication and collaboration with serving staff as well as other kitchen or sushi bar personnel to maintain smooth kitchen operations and excellent customer experiences. The Sushi Chef operates both in the sushi bar area and the back of the house, guaranteeing food safety standards and ingredient freshness at all times. Beyond cooking, the chef contributes to inventory management by assisting in stocking, ordering, and purchasing ingredients prudently to minimize waste while ensuring the availability of fresh supplies. Maintaining a clean and safe work environment is a core responsibility, alongside observing all food safety and sanitation policies.

The position demands a skillful individual capable of multitasking in a fast-paced environment, maintaining a steady and consistent work tempo. The chef should possess a solid understanding of culinary methods, including the use of knives, stove, fryer, steamer, and oven. Reliability, good attendance, a positive attitude, and teamwork are crucial traits to succeed in this role. The job includes physical requirements such as standing and walking continuously throughout shifts, lifting and carrying items up to 50 pounds, and working in heat and steam conditions typically found in a commercial kitchen.   • Ability to stand and walk continually throughout the entire shift
  • Ability to lift carry and stack items weighing up to 50 lbs
  • Ability to bend stoop and reach while carrying items up to 50 lbs
  • Exposure to extreme heat steam and cold present in a kitchen environment
  • Manual dexterity to cut and chop foods and perform other related tasks
  • Position is not eligible for telework flex schedule or additional holidays

Job Duties

  • Operate in the sushi bar and back of the house ensuring food is prepared safely effectively and according to specifications or requests
  • Ensure ingredients and final products are fresh and complete
  • Follow recipes including measuring weighing and mixing ingredients
  • Bake grill steam boil fry and chop meat seafood fruits vegetables and grains
  • Present and garnish final dishes so that they are visually attractive
  • Maintain a clean and safe work environment
  • Contribute to stocking ordering and purchasing of ingredients ensuring necessary ingredients are fresh and available while minimizing spoilage waste
  • Communicate issues with kitchen equipment utensils or other supplies to the Head Sushi Chef
  • Handle and store different types of ingredients appropriately
  • Maintain food and safety sanitation standards policies and procedures
