The Sushi Chef role at Anthony Scotto Restaurants is an integral part of the culinary team, especially within one of their fine dining venues. This position entails preparing high-quality sushi dishes, adhering strictly to food safety and health regulations, and upholding restaurant standards. The Sushi Chef will also be responsible for overseeing ingredient quality, ensuring only premium products are used in dish preparation. Job Requirements
- Bachelor's degree in culinary arts or related field
- Food Protection Certificate
- Proven experience working as a sushi chef in a fine dining environment
- Ability to manage kitchen operations and staff
- Strong understanding of food safety and sanitation standards
- Excellent knife skills and experience filleting fish
- Ability to work efficiently under pressure
- Strong communication skills
- Ability to customize customer orders considering dietary restrictions

Job Duties
- Expertly cutting, slicing, and filleting different types of fish
- Inspect the quality of fruits, vegetables, and fish used to prepare sushi dishes and inform the Executive Chef when quality is sub-standard
- Preparing various sushi dishes according to established guidelines on quality, portion size, presentation, and food safety
- Maintaining a clean work environment to prevent food contamination
- Regularly taking inventory of food supplies and other products
- Reporting any problems with kitchen equipment to the manager on duty
- Sterilizing all utensils, instruments, and equipment used in sushi preparation before every use
- Communicating with wait staff to ensure that special requests and food allergy considerations are satisfied
