The position available is for a Sushi Chef to join one of the company’s fine dining restaurants. This role is central to the culinary team and requires a high level of skill and dedication to Japanese cuisine, especially in the preparation and presentation of sushi. The Sushi Chef will be responsible for preparing traditional Japanese sushi rice, expertly cutting, slicing, and filleting various kinds of fish, and ensuring that all items meet the highest standards of quality and safety. The role demands acute attention to detail and adherence to food health and safety regulations, as well as the ability to customize orders to accommodate customer preferences and dietary restrictions. Job Duties
- Expertly cutting, slicing, and filleting different types of fish
- Inspect the quality of fruits, vegetables, and fish used to prepare sushi dishes and inform the Executive Chef when quality is sub-standard
- Preparing various sushi dishes according to established guidelines on quality, portion size, presentation, and food safety
- Maintaining a clean work environment to prevent food contamination
- Regularly taking inventory of food supplies and other products
- Reporting any problems with kitchen equipment to the manager on duty
- Sterilizing all utensils, instruments, and equipment used in sushi preparation before every use
- Communicating with wait staff to ensure that special requests and food allergy considerations are satisfied
